I made these growing up all the time. My dad served a mission for the LDS church in Brazil and brought back a recipe that we still use today me and my sisters. It’s so simple…yet it satisfies that starchy craving you get when you want bread or cookies and can’t have it…okay not the healthiest way but delicious. Here is a modified version:
Cornstarch Cookies
Use 1 cup earth balance butter
Mix in a generous cup of sugar
Mix in 1 cup flour ( use the flour mixture I have mentioned in other posts…from the cookbook Cooking With Isaiah).
Mix in 2 cups of cornstarch
The mixture will be crumbly, keep mixing and it should start to hold together. Roll flat and cut criss cross into squares. Place on cookie sheet and bake in a 300 degree oven for 30 minutes (mine took less…you don’t want them to be lightly brown…so if they start to brown before 30 minutes take them out)
These are great with some rice milk. They just sort of melt. In. Your. Mouth. So good. Just one of those little things you will love:)
