This is adapted from a recipe handed down to me from my Mom. When I wanted it the other day, I changed and tweaked it so that I could! I really love this, I really love bakery items…anything I can recreate so that I can still relive childhood memories is so good. We used to make this on Sunday afternoons after church when I was growing up..we called it ‘snack’:) we paired it with canned homemade fruit (anything priests were my favorite). So here’s the recipe
Mix together
2 1/2 cups safe flour for you
2 cups white sugar
3 1/2 tsp baking powder
1 tsp salt
3 tsp cinnamon
1 tsp nutmeg
Mix in 3/4 cup butter (I use earth balance). Once it is all mixed together nicely, save aside a bowl full for the topping(like a cereal bowl size).
Then mix in an egg and one cup rice milk with the rest of the above mixture (vanilla might be even yummier than regular)
Grease a square 9×9 pan and pour mixture in and spread evenly. Spread the remaining topping you saved aside on the top. Place in oven and bake for about 40 min at 375..sorry I never really time it..but when it isn’t gooey in the middle and smells delicious you are done..enjoy this, it is DELICIOUS!! This could make any adult or kid happy all day long;)
