Mac and Cheese for me!!!

So this is a find that I love…if you can’t have the real thing, this is the next best thing! Amy’s mac and cheese it’s delicious..ok let’s face it, it will not taste like the cheesy goodness that real cheese holds. BUT, this is really good and fills me up. Sometimes you are so hungry and you just need something to eat and quick! 4 minutes later and you have a piping hot good quick lunch or dinner. We have mac and cheese at our house now and again because I have kids. I love it, and so having this around to eat while they eat theirs helps me stick to my diet. I used to cheat and eat things I shouldn’t..only to find I couldn’t swallow well because of the reaction I was having. Tip. have things on hand that you can eat to satisfy the craving, and then you will be able to stick to it! Happy cheese day!…or at least happy fake cheese day..

    Being French, I used to really miss not having cheese around the house. But now I find this craving isn’t as bad as it was four years ago. However, there are some dishes that just won’t do without cheese: pizza and lasagna are two of them. Made GF lasagna just the other day and topped it with lactose-free Swiss cheese. Well, there was no reaction and no asthma, so yeay! Can you tolerate lactose-free cheese?

      I’m highly allergic to dairy and no coconut so I am left w soy based cheese which is okay but not great..I got a new cheese to try can’t remember the name..hoping it will help a lasagne or a pizza be better without having to just load up on the veggies!
