
Ok, for dinner the other night I made lasagna for my family, you know the kind that is frozen and you stick it in the oven and you have dinner in a couple hours! Well. for me I can’t have the stuff in that, so of course..I chose some nice sunny side up eggs:) Yes, eggs will do in a pinch if they are not on your ‘do not eat’ list. I think there might be a gluten free ready made lasagna I can have, but I haven’t tried that yet, so I will get back to you on that another day maybe….But for dessert, I was going to eat well! So I made butterscotch brownies! They are so delicious. I had them growing up and my mom would make them and they were oh so good! I have learned that one thing I can do is not have to buy every cook book out there, but use my recipes that I have and substitute. So here is the recipe. I just fixed my last post…it said to cook the pumpkin bread at 175 degrees..don’t do that! You will be in the kitchen forever,..it is 375 degrees! I don’t know if you can even cook pumpkin bread like that so long and slow..I guess you could??
So here is the recipe, and so meal or idea number 2 eggs and butterscotch brownies for dessert!
(Substitute Energ Egg substitute if you can’t have eggs!)
Here is the recipe:
Butterscotch Brownies
creme together:
1/2 cup earth balance butter
2 cups brown sugar
2 eggs
then add:
2 tsp baking powder
1 tsp salt
1 tsp vanilla
then mix in:
1 and 1/2 cups gluten free flour mix
Grease the bottom of a 9 by 12 pan with the earth balance butter and spread the dough evenly along the bottom
Bake in oven at 350 degrees for about 25 to 30 minutes, the outside will form a crust before the middle is done. Put tin foil on the top halfway through if the edges or middle are getting to brown too fast. Then pull them out when the inside has turned from smooth and shiny to mottled wrinkly shiny…I know I don’t really have a set time for things, I just go by smell and looks..:) cut them while they are still warm.
Here is the picture of the book that has the amazing flour mix in it. I have also used mixes from the store, but this is my favorite. I order the ingredients mostly online through Amazon..Happy day!!
