Okay, I can’t take credit for this one, but I have to share this amazing thing I had tonight! Yum! My awesome brother Jeff made these, he is an excellent cook, always tweeking things so I can eat with everyone:) Here is the recipe: “start Russet/Idaho potatoes in Cold Water. Bring to a boil and start checking at about 10 or 15 minutes. you want the knife to go through to the middle but you don’t want it to be easy. Rinse them in coldwater. Shred them with a cheese grater or whatever grater you use. Mix a significant amount of mayonnaise, green onions, garlic salt, onion salt. Mix well put in a casserole dish cover with gluten-free cornflakes mixed with canola oil or potato chips, crushed potato chips. Bake at 350 for about an hour covered then take off the cover and let it brown a little bit. Top with whatever cheese you can eat if desired.” Enjoy, Happy Sunday!:)
