French Pancakes

These are really good! Don’t ask me why they are called French pancakes?? But it is from a recipe handed down from my mom from her mom..btw I always add another bit of sugar because its even better:) I had these growing up, and they were more like a crepe. But with gluten free flour they are more cake like. So I found that spreading them out a bit helps because they tend to stay thick. The middle won’t  cook through if you don’t help them to spread out;) Smother with your favorite toppings. We also had bacon…kids had bacon, I had turkey bacon..I make a regular recipe first so the masses are happy, then cook up mine when the kids are done. It makes you a bit starving while cooking, but have your snacks on hand and you will survive!
Here’s the recipe:
1 1/2 cups gluten free flour

1/2 cup sugar(I add 3/4 cup or so..generous)

3 teaspoons baking powder
1 tsp vanilla
1/2 tsp nutmeg (don’t forget this!)
2 eggs
1 1/3 cups rice milk (I used vanilla flavored..)
1/4 tsp salt
Mix till just blended and cook it up:)

    The recipe is on my French site, which you just subscribed to (thank you ☺️). You can substitute any flour mix of your choice, and also use pear sauce instead of apple sauce. The hard part with crepes is flipping them over, especially when they are big. But I am sure you’re an expert, your grandma and mom undoubtedly passed on their knowledge in your genes!

          I bet you are an amazing cook! Is your site a lot about cooking without sulfites? I’m thinking I see gluten free as well..but I’m not a French speaker, great pictures though, and you are obviously great at English!

            Well… my Significant Other is American and two of our three wonderful children live in the U.S. (The middle one works and lives in France with his Japanese wife)
            As for the recipes, they are free of any additives (to avoid sulfites, if you want to see what it does to my husband just take a look at the bottom of the page “dans mon placard”), dairy-free and gluten-free. The sulfite and dairy side is for him: all of this had been giving him asthma for over twenty years. And I found along the way that I had a strong gluten sensitivity, which explained my recurring multiple digestive issues.
            Basically my cooking is made from fresh and natural ingredients. As I sit here typing I am having breakfast, enjoying an amazing gluten-free English muffin from the batch I baked yesterday. What time is it on your side of the pond?

    Maybe the reason they are thickish is because you add baking powder, which makes them rise? We never do when making crepes. I should really post my recipe for them in English.
    Anyway, yours look really good and filling, can I have some ?

      Haha yes! You can have some;) maybe so, maybe I try without the baking powder…or maybe I should add more rice milk to make them thinner..they are supposed to be more like a crepe..but I’m not patient enough to always measure things perfect..that could be the problem. Would love the crepe recipe!
